Galileo was opened in 2004 through the collaborative efforts of head chef, Vincenzo Soresi and general manager, Una Hosgood. Together, they desired to create a new kind of restaurant – one that offered an authentic Italian food experience in a humble, yet intimate environment.

Vince’s commitment to using only seasonal, fresh produce means that the menu is constantly adapting. Galileo is a fully-licensed establishment, offering a wine list that boasts over 400 wines from around the world.
